100 grams pasilla chile
50 grams tomatillo
1 onion
1 tablespoon vegetable shortening
2 cloves garlic

200 grams panela cheese

Roast the chiles and tomatillos on a griddle or skillet.
Once roasted, open them, remove the seeds, and soak them in a little salted water.
Once roasted, blend them with the garlic and onion.
In a saucepan, melt the lard; when it's hot, pour in what was blended earlier.
Cut thick slices of cheese (approximately 5 cm thick) and add them to the sauce.
When it starts to boil, turn off the heat and stir a little to integrate everything.
