Esquites with Melted Cheese

  • 3 tablespoons butter
  • 1/4 cups onion
  • 2 tablespoons clove garlic
  • 4 cups corn kernels
  • 1 cup chicken broth
  • 2 árbol chiles
  • 3 leaves epazote
  • salt

  • 1/4 cups lager beer
  • 1 cup Gouda cheese
  • 1/2 cups Manchego cheese
  • mayonnaise

  • Melt the butter in a skillet and sauté the onion, garlic clove, and corn kernels for 5 minutes. Add the chicken broth, chiles, epazote, salt, and pepper, and cook for 5 more minutes.
  • Melt butter in another skillet and sauté the onion and garlic for 2 minutes, then pour in the beer and let it reduce for 3 minutes. Finally, add the gouda cheese and manchego cheese and cook until melted.
  • Place the esquites on top of the melted cheese, decorate with mayonnaise, cheese, and chili powder, and serve with Sidral Mundet® Apple flavor.
