Melt the butter in a skillet and sauté the onion, garlic clove, and corn kernels for 5 minutes. Add the chicken broth, chiles, epazote, salt, and pepper, and cook for 5 more minutes.
Melt butter in another skillet and sauté the onion and garlic for 2 minutes, then pour in the beer and let it reduce for 3 minutes. Finally, add the gouda cheese and manchego cheese and cook until melted.
