  • 4 cups corn masa flour
  • 1 cup wheat flour
  • 1/2 cups vegetable oil
  • 1 teaspoon baking powder
  • salt
  • water
  • 2 cups Oaxaca cheese, shredded
  • vegetable oil
  • salsa, for accompaniment

  • In a bowl, combine corn flour, wheat flour, vegetable oil, baking powder, and salt. Mix until integrated and all lumps are dissolved. Gradually pour in the water until you obtain a homogeneous dough.
  • Form small balls with the dough and flatten them with a tortilla press. Add a little cheese and fold the quesadilla, sealing it well, and repeat with the remaining dough.
  • Fry the quesadillas in a pot with oil over medium heat for 5 to 8 minutes. Remove the quesadillas and place them on a plate with absorbent paper.
  • Serve the cheese quesadillas on a flat plate and accompany with crushed salsa.
