Jalapeños Stuffed with Cheese

  • 24 Jalapeño chiles
  • 450 grams Oaxaca cheese
  • 1 onion, finely chopped
  • 1/2 cups flour
  • 2 eggs, beaten
  • 1 package salty cracker, crushed
  • 2 cups vegetable oil

  • Cut off the top (the stem) of each chile, remove all seeds and veins.
  • In a pan, heat a little oil and add the onion, wait for it to become translucent.
  • Then add the Oaxaca cheese and wait for it to melt.
  • Stuff the chiles with the cheese mixture.
  • Dredge the chiles in flour, then dip them in egg and finally coat them with crushed cracker.
  • Place the chiles in a pot with hot oil and when they reach the desired color, remove them and place them on a plate with a paper towel to absorb excess oil.
  • Serve the chiles hot.
