Leaf cheese is a typical food in some areas of Ecuador. The name comes from the achira leaf, where the cheese is left to rest, giving it a unique and exquisite flavor.

1 kilo queso fresco
3 tablespoons salt
8 avocado leaves, from achira plant
2 liters water

Wash the cheese and cut it into slices.
In a container, boil water and salt. Introduce a slice of cheese until it is very soft.
Wash the achira leaves beforehand, remove them, and flatten the part close to the stem using a rolling pin.
Place the hot cheese in two leaves and then inside a small plastic bag to shape and size it. All of this should be done before it cools down.
Store in a cool place or refrigerate.
