100 grams cherry tomato
1 onion, small finely chopped
2 cloves garlic, finely chopped
red chili flakes, to taste
2.5 cups Chihuahua cheese, grated
basil, fresh or finely chopped cilantro (optional)

Heat the chopped garlic in a pan with a drizzle of olive oil. Leave it on the heat for a bit but be careful not to burn it.
Add the tomatoes, onion, and chili flakes. Cook for 10 minutes.
Add the cheese and let it melt completely. Do not let it form a crust, it should have a fondue-like consistency.
Add the chopped basil leaves. Serve it with tortillas.
