Ricotta Taquitos

Golden tacos filled with ricotta, ham, and Manchego cheese that will be a hit among your guests. Excellent for elegant evenings that will leave a good taste in their mouths.

  • 1/2 onions, finely chopped
  • 1/2 kilos requesón
  • vegetable oil
  • 1 garlic, finely chopped
  • 8 flour tortillas
  • 8 slices deli ham
  • salt, and pepper
  • 1/2 teaspoons granulated chicken bouillon
  • 8 strips Manchego cheese, to taste

  • Put oil in a saucepan and sauté the onion and garlic over low heat.
  • Add the ricotta to the pan with the garlic and onion.
  • Season the ricotta with salt, pepper, and powdered chicken broth. Let it cook for 3 minutes, making sure it doesn’t stick.
  • Heat the tortillas on a griddle for a short time to soften them.
  • Spread the tortillas on a flat surface and place a slice of ham on each one.
  • On top of the ham, add a layer of ricotta spread with a spoon.
  • On top of the ricotta and in the middle of the ham, place a strip of Manchego cheese.
  • Fold two ends of the tortilla to form parallel lines as shown in Photograph No.4
  • Roll the tortilla to make burritos.
  • Put oil in a pan and let it heat.
  • Lower the heat of the pan and place the burritos with the seam side of the tortilla directly into the oil so they do not open.
  • Roll the burritos until they are golden brown on all sides.
  • Cut in half diagonally and place on a platter.
