Place a slice of cheese on the lower half of a long slice of cooked ham and then fold the ham in half to form a little book.
If you are using square slices, take two and place the cheese between them. Repeat this step until you have all the San Jacobos assembled.
Heat oil in a frying pan.
Now start passing the San Jacobos through the flour.
This step is important because if you take them directly to the egg without going through the flour, the egg will not stick well to the ham and you would have to double coat them.
Beat the eggs with a pinch of salt. Then dip the floured San Jacobos in the egg, making sure they are well soaked on both sides.
Then, coat them in breadcrumbs and bread the San Jacobos well.
When the oil is hot, fry the San Jacobos on both sides.
Since they are so thin, they will fry in a couple of minutes; when they are golden, remove them from the oil and place them on paper towels to absorb the excess fat.
