Cherry Tomatoes Stuffed with Hummus and Edamame

Fresh and delicious recipe for cherry tomatoes stuffed with hummus and edamame, very easy to prepare.

  • 1 cup edamame, cooked

  •  radishes, thinly sliced radishes, thinly sliced

  • In a food processor, place the edamame until you achieve a smooth puree. Add the lemon juice, sesame oil, salt, and pepper, and mix; process again until all ingredients are well combined.
  • Cut off the top of the cherry tomatoes and, using a small spoon, carefully remove the pulp to leave a hollow inside. Place the edamame hummus in a piping bag or a plastic zip bag with one corner cut off. Fill the cherry tomatoes with the hummus and garnish with the sliced radishes.
