Ingredients

8 portions
  • 1 cup edamame, cooked
  • 1 lemon juice
  • 2 teaspoons Sesame oil
  • salt
  • black pepper, freshly ground
  • 14 cherry tomatoes
  • radishes, in thin slices

Preparation

In a processor, put the edamame until you get a smooth puree. Add the lemon juice, sesame oil, salt and pepper and mix and re-process until all the ingredients are well mixed.
Cut the top of the cherry tomatoes and carefully remove the pulp with a teaspoon, leaving a hole in the inside. Place the edamame hummus in a pastry bag (duya) or a plastic zip bag with a cut corner. Stuff the cherry tomatoes with the hummus and garnish with the radish slices.
