  • 1/2 cups breadcrumbs
  • 1/2 cups potato, seasoned, crushed
  • 1/2 cups corn flakes
  • 1 tablespoon cornstarch
  • vegetable oil, for frying
  • 1/2 cups honey, for the sauce
  • 6 chipotle chiles, dried, finely chopped, for the sauce
  • 2 tablespoons rice vinegar, for the sauce
  • 1 tablespoon ginger, finely chopped, for the sauce
  • 2 tablespoons soy sauce, for the sauce
  • 1 tablespoon garlic, finely chopped
  • 2 tablespoons cornstarch, for the sauce
  • 1/4 cups water, for the sauce
  • 1/4 cups lime juice, for the sauce
  • 2 tablespoons Sriracha sauce, for the sauce
  • green onion stalks, chopped, for garnish

  • Place the chicken breasts in a bowl and mix with the egg, salt, and pepper, set aside.
  • In a bowl, mix the breadcrumbs with the potatoes, corn flakes, and starch, and coat the chicken with this mixture, covering completely.
  • Fry the chicken strips in a pot with hot oil until golden brown and drain on paper towels. Set aside.
  • For the sauce, in a small pot, cook the honey with the chipotle pepper, vinegar, ginger, soy sauce, and garlic. While it comes to a boil, hydrate the starch with water in a bowl and pour it into the sauce, add the lime juice and sriracha. Cook until thickened and season.
  • In a bowl, mix the chicken strips with the sauce, ensuring they are completely covered.
  • Serve on a platter and garnish with green onion stems. Accompany with grilled corn and enjoy.
