Salbutes

Delicious typical dish from the Yucatán region, these salbutes will delight you. It is a very tasty recipe, and everyone I know loves it.

  • 1 chicken breast, whole, unboned
  • 4 tomatillos
  • 1 lettuce
  • 1 cup onion, pickled
  • 1 stick achiote paste
  • 1 avocado
  • 1/2 kilos dough
  • vegetable oil
  • 2 carrots, boiled, and sliced.
  • 1/2 kilos flour
  • salt
  • 3 bitter oranges

  • Mix the dough with the flour and salt. NOTE... add the flour until it has a good consistency. Once well mixed, proceed to flatten it to shape it into a tortilla. Heat the oil, and once hot, fry the tortillas until they are golden and well cooked.
  • Tear the lettuce into leaves the size of the tortilla, slice the tomato, as well as the carrot previously cooked in water.
  • Boil the chicken until cooked, and obtain a broth from it. After this, dissolve the red recado or annatto paste in the orange juice, coat the chicken with this mixture, and grill it or, if you prefer, you can fry it.
  • Once the recado or annatto paste is cooked, let the chicken cool. When it is cool, proceed to shred the chicken.
  • To assemble the salbutes, first place the tortilla, then add the lettuce, shredded chicken, a little pickled onion, a slice of tomato, a slice of carrot, and finally add a piece of avocado. And with this, we finish our dish.
