Delicious chicken burritos to enjoy for lunch. The chicken is stewed with red bell pepper, onion, garlic, salt, and pepper. Added with a bit of cumin and tomato sauce. This is the filling for a burrito made with 100% Mexican flour tortillas.
Brown the breasts with a pinch of salt and pepper.
Cut them into not too large pieces and set aside. In the same pan, brown the chopped garlic, then add the julienned onion and the red bell pepper also julienned.
Add a little salt and a bit of cumin (to taste).
When the vegetables are tender, but not too mushy, add the chopped chicken and the tomato sauce.
Stir on low heat and let it rest.
Fill the tortilla and close it like a cannelloni. Heat the burrito in the oven or microwave to warm the tortilla and make it crispy.
Remove from the oven, let it cool, unmold, and ready to serve.
