Chicken Puff Pastries with Mole

Chicken puff pastries are very common in Mexican bakeries, usually filled with chicken and mole, ham, tuna salad, and some other traditional stews. Chicken puff pastries with mole can be commonly used as snacks at parties and gatherings or simply to treat your family to a delicious appetizer.

  • 4 cups flour, for the dough
  • 1/2 cups sugar, for the dough
  • 1 envelope yeast, 11 g, for the dough

  • 1 pinch salt, for the dough
  • 120 grams butter, for the dough

  • 1 Mexican chocolate tablet, for the mole
  • 4 cups chicken breast, cooked and shredded

  • In a mixing bowl, combine the flour, sugar, yeast, eggs, salt, and butter. Using a dough hook, mix at medium speed while gradually adding the milk until you have a smooth and homogeneous dough. Place in a greased bowl and cover with a damp cloth or plastic wrap, and let it ferment for 20 minutes until it doubles in size.
  • For the filling, in a bowl, mix the butter with the flour until you have a homogeneous paste. Reserve.
  • On a floured surface, roll out the dough until it is 5 mm thick, spread the filling over the dough until completely covered, and roll the dough as shown in the video.
  • To portion the dough, cut it in a way that covers the filling, shape it into balls, and place them on a previously floured and/or greased baking tray, brush the pastries with butter, and let them ferment for 20 minutes.
  • With your hands, gently press the pastries to flatten them and bake at 170°C for 20 minutes.
  • For the mole, in a small pot over medium heat, heat the chicken broth, add the mole paste, and with the help of a spoon, dissolve while stirring continuously. Add the chocolate tablet and cook for 20 minutes on low heat, stirring constantly, and adjust seasoning. Reserve.
  • Add the cooked and shredded chicken and let it cook for 5 minutes. Allow to cool and reserve.
  • Cut the pastries in half and fill with chicken and mole, and enjoy.
