Chiliajo Toast

A very quick and easy recipe for chileajo toasts. It is great for vegetarians but I assure you that anyone will like it. It is prepared with a toast base and topped with a variety of vegetables.

vegetable oil, for frying
1/4 kilos Manchego cheese, Lyncott ®
200 grams guajillo chile, raw soaked
3 heads garlic
2 black peppercorns
1 clove
1 tablespoon oregano
3 tablespoons lard
vinegars, to taste
100 grams carrot
salt, to taste
1 cup refried black beans, thick consistency ground
200 grams potato, cooked and chopped
200 grams green beans, cooked and chopped
200 grams peas, cooked

The chili, garlic, and spices are ground and fried in lard, adding vinegar to form a very light sauce.
It is allowed to boil, vegetables are added, and then turned off immediately.
Season with salt and let rest, preferably overnight.
The tortillas are fried until golden.
They are spread with refried beans, topped with chileajo and grated Lyncott ® Manchego cheese.
