Chiliajo Toast

A very quick and easy recipe for chileajo toasts. It is great for vegetarians but I assure you that anyone will like it. It is prepared with a toast base and topped with a variety of vegetables.

  • 12 tortillas, medium
  • vegetable oil, for frying
  • 1/4 kilos Manchego cheese, Lyncott ®
  • 200 grams guajillo chile, raw soaked
  • 3 heads garlic
  • 2 black peppercorns
  • 1 clove
  • 1 tablespoon oregano
  • 3 tablespoons lard
  • vinegars, to taste
  • 100 grams carrot
  • salt, to taste
  • 1 cup refried black beans, thick consistency ground
  • 200 grams potato, cooked and chopped
  • 200 grams green beans, cooked and chopped
  • 200 grams peas, cooked

  • The chili, garlic, and spices are ground and fried in lard, adding vinegar to form a very light sauce.
  • It is allowed to boil, vegetables are added, and then turned off immediately.
  • Season with salt and let rest, preferably overnight.
  • The tortillas are fried until golden.
  • They are spread with refried beans, topped with chileajo and grated Lyncott ® Manchego cheese.
