4 ears corn, with husks
1/2 cups queso fresco, grated
1/2 cups cheddar cheese, grated
bacon, fried and diced
lime, quartered, for serving

Blend the mayonnaise with sour cream, garlic, chipotle chili, seasoning juice, and pepper to taste until fully integrated. Set aside.
On a grill over direct heat, place the corn pieces with husks, grilling while constantly moving the pieces to ensure even cooking. After 10 minutes of grilling, remove the husks and cook the corn for 10 more minutes.
Spread the corn with chipotle mayonnaise, top with fresh cheese, cheddar cheese, and fried bacon. Serve with lime to taste.
