Ingredients: 1/2 cups mayonnaise; 1/4 cups sour cream, for the mayonnaise; 1 clove garlic; 2 chipotle chiles in adobo sauce, for the mayonnaise; 1 teaspoon seasoning sauce, for the mayonnaise; pepper, for the mayonnaise; 4 ears corn, with husks; 1/2 cups queso fresco, grated; 1/2 cups cheddar cheese, grated; bacon, fried and diced; lime, quartered, for serving

On a grill over direct heat, place the corn pieces with husks, grilling while constantly moving the pieces to ensure even cooking. After 10 minutes of grilling, remove the husks and cook the corn for 10 more minutes.
