Choriqueso and Jalapeño Ring

  • 2 tablespoons vegetable oil
  • 1/2 cups onion, finely chopped
  • 2 cups chorizo, in small pieces
  • 1 tablespoon garlic powder
  • 1 cup asadero cheese, in cubes
  • 1 cup San Marcos® pickled jalapeño slices
  • 2 cups cream cheese, in cubes
  • 1/4 cups parsley, chopped
  • salt

  • 1/2 cups bell pepper, in brine, for decoration
  • 1/2 cups San Marcos® pickled jalapeño slices, for decoration
  • crackers, or tostadas, for snacking

  • Pour vegetable oil into a pan and once hot, sauté the onion until it becomes translucent. Add the chorizo and garlic powder, browning over medium-low heat.
  • Once the chorizo is browned, turn off the heat, add the asadero cheese, cover, and let it gratin. Remove from heat and let it cool slightly.
  • Cut the San Marcos® pickled jalapeño strips into small cubes and set aside.
  • In a bowl, soften the cream cheese until it reaches a spreadable consistency. Add the chorizo mixture, the San Marcos® pickled jalapeño strips, the chopped parsley, and season with salt and pepper. Mix well.
  • Pour the mixture into a ring mold lined with cling film. Use a silicone spatula to compress the mixture and refrigerate for 1 hour.
  • Unmold the choriqueso ring, decorate with red bell pepper and San Marcos® pickled jalapeño strips. Serve with tostadas or crackers for snacking.
