Costielotes

Enjoy all the flavor of these little corns drenched in a spicy and seasoned sauce that perfectly complements and balances the taste. You won't believe they're corn!

  • 4 ears corn
  • 1 cup potato chips, marinated
  • 1/2 cups BBQ sauce
  • 1/2 cups hot sauce
  • 2 tablespoons buffalo sauce
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 tablespoon lime pepper
  • salt
  • 1 cup sour cream, for the dressing
  • 2 tablespoons mayonnaise, for the dressing
  • 1 tablespoon chives, for the dressing

  • potato wedges, for serving

  • On a cutting board, cut the corn lengthwise into 4 parts as shown in the video. Set aside.
  • Add the potatoes to a resealable bag and use a rolling pin to crush them into a powder.
  • In a bowl, mix the BBQ sauce, hot sauce, buffalo sauce, garlic powder, onion powder, lemon pepper, and salt. Dip the corn in the sauce.
  • Place the costielotes on a baking tray, sprinkle with potato wedges, and bake for 30 minutes at 200°C.
  • For the dressing, in a bowl, mix the cream, mayonnaise, and chives; season with salt and pepper.
  • Serve the costielotes with wedge potato dressing and accompany with a beer.
