Creamy Spinach with Parmesan

  • 3 tablespoons butter, in small cubes
  • 1/2 cups onion, in strips
  • 3 cups spinach, only leaves
  • 1/4 cups cuaresmeño chile, in small cubes
  • 1 cup sour cream
  • 1/2 cups clotted cream
  • 1 cup whipping cream
  • 1 tablespoon garlic powder
  • 1 cup Parmesan cheese, grated
  • white pepper
  • salt
  • 1/4 cups chives, finely chopped, for garnish

  • In a deep saucepan or skillet, melt the butter and cook the onion until it becomes shiny. Add the cuaresmeño pepper, spinach, sour cream, heavy cream, and garlic powder; mix and cook for 3 minutes over medium-low heat. Incorporate the parmesan cheese, season with salt and white pepper. Cook for 5 more minutes or until the cheese has gratinated.
  • Serve hot, garnish with chopped green onions, and accompany with Galletas Saladitas® Gamesa®.
