Cod Croquettes

Cod croquettes are a version of American crab cakes but made with cod this time. Delicious!

  • 1 can cod, Langa® *
  • 1/4 cups mayonnaise
  • 1 egg, lightly beaten
  • 1/2 tablespoons cumin
  • 1/4 tablespoons pepper, Terana® *
  • 1 tablespoon lime juice
  • vegetable oil, for frying
  • 3/4 cups plain yogurt
  • flour, for breading
  • breadcrumbs, for breading
  • 6 leaves lettuce, for decoration

  • Drain the can of cod of all liquid using a chinois strainer.
  • In a bowl, mix the can of cod with mayonnaise and breadcrumbs.
  • Using a scoop, form croquettes.
  • Coat the croquettes in flour, egg, and breadcrumbs.
  • Fry in plenty of hot oil.
  • Remove the croquettes from the oil and dry them with paper towels to remove excess grease.
  • To make the accompanying sauce, mix yogurt, mayonnaise, lemon, and season with salt and pepper. Serve with the croquettes on a bed of lettuce.
