We boil the milk and cream with a little salt, black pepper, and nutmeg.
We make a roux with the butter and flour, cooking it well so the flour doesn’t remain raw, gradually incorporating the milk and cream while stirring well to prevent sticking, and we add the ham and beef, previously sautéed.
We let it cook on the griddle over low heat for 15-20 minutes, pour it onto a tray and let it cool to shape and bread it.
