We boil the milk and cream with a little salt, black pepper, and nutmeg. We make a roux with the butter and flour, cooking it well so the flour doesn’t remain raw, gradually incorporating the milk and cream while stirring well to prevent sticking, and we add the ham and beef, previously sautéed.
