Croquettes are always a good option as a snack or lunch for the little ones. This time we made a potato version, mixed with bacon and filled with manchego, cheddar cheese, and the spicy touch of jalapeño pepper. Fascinating!
In a bowl, mash the cooked potatoes until you get a puree, add the manchego cheese, bacon, salt, and pepper. Form balls of approximately 15 grams, filling them with cheddar cheese and jalapeño pepper.
Coat the croquettes by dipping them in beaten egg and then in breadcrumbs.
Heat the oil in a deep pot and fry the balls until crispy, remove from the fryer and eliminate excess grease with paper towels.
Serve the croquettes with a bit of salad and chipotle dressing.
