Serrano Ham Croquettes

  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 1/2 cups flour
  • 1 1/4 cups whole milk
  • 1/3 cups serrano ham, finely chopped
  • 1 stick cream cheese
  • 1 pinch nutmeg
  • 2 eggs
  • 1 cup breadcrumbs
  • vegetable oil

  • Place the oil and butter in a pot and heat over medium heat.
  • Add the flour and mix quickly with a wooden spatula for 1 minute.
  • Add the milk and continue mixing for 2-3 minutes.
  • Add the ham, cream cheese, and nutmeg. Mix with a wooden spoon for 2 minutes.
  • Place the mixture in a baking dish and refrigerate for at least 2 hours or overnight.
  • While the mixture is chilling, prepare a bowl with beaten egg and another bowl with bread crumbs.
  • Remove the mixture from the refrigerator and use a spoon to make small balls; dip each ball in the egg and then in the bread crumbs, placing them on a plate.
  • Refrigerate for at least 20 more minutes.
  • Meanwhile, heat the vegetable oil over medium heat. Fry the croquettes until golden brown (about 2 minutes) and drain on paper towels.
