Place the oil and butter in a pot and heat over medium heat.
Add the flour and mix quickly with a wooden spatula for 1 minute.
Add the milk and continue mixing for 2-3 minutes.
Add the ham, cream cheese, and nutmeg. Mix with a wooden spoon for 2 minutes.
Place the mixture in a baking dish and refrigerate for at least 2 hours or overnight.
While the mixture is chilling, prepare a bowl with beaten egg and another bowl with bread crumbs.
Remove the mixture from the refrigerator and use a spoon to make small balls; dip each ball in the egg and then in the bread crumbs, placing them on a plate.
Refrigerate for at least 20 more minutes.
Meanwhile, heat the vegetable oil over medium heat. Fry the croquettes until golden brown (about 2 minutes) and drain on paper towels.
