Preparation
Place the oil and butter in a pot and heat over medium heat.
Add the flour mixes quickly with a wooden shovel for 1 minute.
Milk is added and mixing continues for 2-3 minutes.
Add ham, cream cheese and nutmeg. Mix with a wooden spoon for 2 minutes.
Place the mixture in a refractory and refrigerate for at least 2 hours or overnight.
While the mixture is cooling, prepare a bowl with the beaten egg and another bowl with the ground bread.
The mixture is removed from the refrigerator and balls are made with a spoon, each ball is immersed in the egg and then in the bread crumbs and placed on a plate.
Refrigerate for at least 20 more minutes.
Meanwhile the vegetable oil is heated over medium heat. Fry the croquettes until they are golden brown (about 2 minutes) and dry with paper towels.
