Spinach Croquettes

  • 500 grams spinach, frozen
  • 1 tablespoon raisins
  • 2 eggs
  • 1 gram table salt
  • 300 grams bread crumbs
  • 5 cloves garlic
  • 3 tablespoons canola oil
  • 1 onion
  • 1 tablespoon pine nuts
  • 5 tablespoons all-purpose wheat flour
  • 750 milliliters rice milk, warm

  • Prepare the spinach and boil it in water.
  • Peel the garlic and slice it.
  • Heat the oil and fry the garlic over low heat.
  • Add the boiled and well-drained spinach.
  • Sauté a little until they are well dried, then add the raisins and pine nuts just before removing from the heat.
  • Add enough oil to cover the bottom of the pan, when hot add the chopped onion, when it is transparent add the flour gradually, so that it mixes with the oil and does not form lumps.
  • Slowly add the warm milk to make the béchamel.
  • Once the béchamel is thick, add the spinach and stir to combine.
  • Let the pasta cool.
  • Take pieces of this mixture, shape them, and coat them in beaten egg and breadcrumbs.
  • Fry in plenty of hot oil.
  • Remove and place on absorbent paper and serve.
