4 potatoes, cooked and peeled
3 cups tuna
2 tablespoons onion, finely chopped
2 eggs
3 cups Bimbo ® classic breadcrumbs
4 tablespoons cornstarch
2 tablespoons parsley, finely chopped
salt and pepper
190 grams cream cheese, cold and diced
1 cup flour
2 eggs
2 cups vegetable oil, for frying

In a bowl, mash the potatoes until smooth and lump-free.
Add the tuna, onion, egg, cornstarch, parsley, and season with salt and pepper.
Form balls with your hands and place a piece of cream cheese in the center. Close and shape into a croquette. Repeat until the mixture is finished.
Coat the croquettes by passing them through flour, egg, and Bimbo ® Classic Breadcrumbs.
In a pan, heat the oil over medium heat and fry the croquettes until golden brown.
