Tuna Croquettes with Chipotle Sauce

  • 3 cans canned tuna in water
  • 1 cup breadcrumbs
  • 2 potatoes, cooked and mashed
  • 1 pinch salt, and pepper to taste
  • 2 tablespoons parsley, chopped
  • 1 egg, beaten
  • 1 garlic, ground or crushed
  • 5 tablespoons Parmesan cheese powder
  • 3 chipotle chiles, finely chopped marinated
  • 1/2 onions, finely chopped
  • 1 cup vegetable oil, for frying
  • 4 tablespoons mayonnaise

  • Mix the potato with the tuna, garlic, onion, parsley, and Parmesan cheese. Form small balls.
  • Coat the balls, first dipping them in the beaten egg and then in the breadcrumbs.
  • In a pan, heat the oil and fry the croquettes until golden and crispy. Then place them on absorbent paper to remove excess grease.
  • For the sauce, mix the mayonnaise with finely chopped chipotle peppers. Season with salt and pepper.
