Cucumbers for Kids

Treat the little ones with this fun and healthy recipe of cucumbers with peanuts, jicama, yogurt, and coconut! Remember that cucumber has various properties and is considered a diuretic, antioxidant, anticancer, and anti-inflammatory.

  • 3 cucumbers
  • 1 cup jicama, without skin and cut into small cubes
  • 1 cup peanuts
  • 3 tablespoons plain yogurt
  • 1 cup coconut grated

  • Peel half of the cucumber skin using a peeler and cut in half, so we have one part of pulp without skin and the other with skin. Cut the half without skin into small cubes, removing the seeds. On the other hand, cut the half with skin in half, width-wise, to have 2 pieces. Set aside.
  • Remove all the seeds from the cucumber with a spoon and leave space to fill the cucumber halves that have skin.
  • Fill the cucumbers with the jicama cut into cubes, add unsalted peanuts, natural yogurt, and grated coconut. Place on a serving plate and enjoy!
