Cucumbers with Avocado and Shrimp

  • 1 clove garlic, finely chopped
  • 1/4 cups white onion, finely chopped
  • 2 cups shrimp, clean and peeled
  • 1 tablespoon paprika
  • 1 pinch salt
  • 1 pinch pepper
  • 2 avocados, for the guacamole
  • 1/4 cups lime, for the guacamole
  • 1 tablespoon garlic powder, for the guacamole
  • 2 tablespoons olive oil, for the guacamole
  • 1 tablespoon serrano chile, finely chopped, for the guacamole
  • 1 pinch salt, for the guacamole
  • 2 cucumbers
  • 2 tablespoons parsley, finely chopped

  • Heat a skillet over medium heat with the butter, cook the garlic, white onion, and shrimp, seasoning with paprika, salt, and pepper to taste. Set aside.
  • In a bowl, mix the avocado with lime juice, garlic powder, olive oil, serrano chili, and season with salt to taste.
  • Cut the cucumber into medium-thick slices with the skin on. Spread a little guacamole and place shrimp on top. Garnish with parsley.
