Ideal for snacking, Serrano ham croquettes are a typical appetizer of Spanish cuisine, and they are served in practically any place, accompanied by a cold beer or other appetizers. You will love them!
In a saucepan, melt the butter over medium heat and brown the Serrano ham. Then add the flour and gradually pour in the milk; cook over medium heat, stirring constantly until the sauce begins to thicken, using a hand whisk to incorporate evenly. Switch to a wooden spoon and add the nutmeg, salt, and pepper; cook for 10 minutes, stirring constantly until you achieve a thick consistency.
Pour the mixture into a container or tray and spread it over the entire surface with a silicone spatula, cover with plastic wrap to prevent a crust from forming, let cool at room temperature, and then refrigerate for at least 4 hours.
Once the mixture is solid, remove the plastic, dust with flour, and cut strips with a knife; carefully unmold. Cut the strips into smaller squares to form the croquettes. Dust your hands with flour to shape the croquettes.
Coat the croquettes, dip in egg, and cover with breadcrumbs. Fry in hot vegetable oil for at least 6 minutes, drain on paper towels.
Serve and accompany with your preferred dressing. Also, you can include olives or potato chips. We recommend trying them with a nice cold beer.
