Cheese, Jalapeno, and Chorizo Dip

  • 3 tablespoons butter
  • 1 1/2 cups onion, chopped
  • 1 teaspoon sugar
  • 2 cups Jalapeño chile, in slices
  • 2 cups chistorra
  • 3 cups cream cheese
  • 1 1/2 cups cheddar cheese
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1/2 cups fresh chives, chopped
  • salt
  • pepper
  • 3 cups pepperoni
  • Manchego cheese, in strips
  • saltine crackers, for serving

  • Heat a skillet over medium heat and melt the butter, add the onion and sugar, caramelize for 5 minutes; add the jalapeños and chorizo, let cook for 5 more minutes. Set aside.
  • Beat the cream cheese for 5 minutes until smooth.
  • Mix the cream cheese with the cheddar cheese, paprika, garlic powder, green onions, and the mixture you previously made with jalapeños, onion, and chorizo. Season with salt and pepper.
  • On a board, place plastic wrap and pour the dip, cover with more plastic wrap and shape with your hands to form a ball. Refrigerate for 30 minutes.
  • Remove the plastic wrap, cover the dip with pepperoni and place the cheese strips to simulate a ball. Serve with crackers.
