Green Mango Chutney

  • 3 kilos manila mango, green
  • 750 milliliters apple cider vinegar
  • 300 grams raisins
  • 2 tablespoons fresh ginger, grated
  • 4 cloves garlic, chopped
  • 1 onion, medium, chopped
  • 2 serrano chiles
  • 1 tablespoon sweet paprika
  • 2 tablespoons cinnamon powder
  • 1 tablespoon salt
  • 1/2 teaspoons black pepper
  • 1 1/2 cups piloncillo
  • 3 cups sugar, granulated
  • 3 tablespoons orange zest
  • 1 orange juice, fresh

  • Follow the sterilization instructions for the Express Pressure Cooker® for the jars and lids before and after filling.
  • In an Express Pressure Cooker®, place all the ingredients and mix.
  • Close the Express Pressure Cooker® and attach the pressure regulator, place it on the stove over high heat for approximately 25 minutes or until a steady stream of steam is released, then lower the heat to medium and cook for 15 minutes.
  • Remove the Express Pressure Cooker® from the heat, let it cool, remove the pressure regulator, open the Express Pressure Cooker® and you're done!
  • Immediately jar it in previously sterilized jars and seal.
