Guacamole with Marinated Shrimp

In Mexico, pairing a snack with a good dip or homemade guacamole is almost a ritual. That’s why we’re sharing this recipe for Guacamole with Marinated Shrimp that you can garnish with a bit of serrano chili. The special thing about this typical Mexican dish is that the shrimp are marinated and made with a guajillo chili sauce. A great tip for this Lent recipe or perfect for snacking is not to overcook the shrimp because they will become tough.

  • 4 guajillo chiles, clean and pitted, soaked in hot water
  • 1/2 onions, grilled
  • 1 tablespoon pepper
  • 1/4 cups lime juice
  • 1 tablespoon butter
  • 1/2 kilos shrimp, without shell and clean
  • 2 avocados, for the guacamole
  • 1/4 cups lime juice, for the guacamole
  • 1/4 cups fresh cilantro, finely chopped, for the guacamole
  • 3 serrano chiles, finely chopped, for the guacamole
  • salt

  • 2 serrano chiles, sliced thin, for garnish

  • For the marinade, blend the guajillo chili with the onion, garlic, black pepper, lime juice, and salt.
  • Heat a skillet over medium heat with the butter, cook the shrimp with the marinade without overcooking. Adjust seasoning and set aside.
  • In a bowl, mash the avocados with the lime juice, add the cilantro, the serrano chili, season with salt to your taste, and set aside.
  • Place a bit of guacamole on a Ritz® cracker and top with two shrimp, garnish with slices of serrano chili, serve several and enjoy.
