Healthy Artichoke Dip

Prepare this delicious and creamy healthy artichoke dip accompanied by pita bread and vegetables. The best part is that you won’t believe how easy and smooth it turns out. You just need to cook the artichokes and blend the ingredients to prepare it. It’s the perfect snack!

  • 5 artichoke
  • water
  • salt
  • 1 lemon
  • 1/2 cups spinach
  • 1 clove garlic
  • 1/8 onions
  • 2 Jalapeño chiles, seedless
  • 2 tablespoons low-fat mayonnaise
  • 1/2 cups Greek yogurt
  • 1 tablespoon lime juice
  • salt and pepper
  • 1 cucumber, in sticks, for accompaniment
  • 1 carrot, in sticks, for accompaniment
  • 3 stems celery, in sticks, for accompaniment
  • toast, for accompaniment

  • Clean the artichokes by removing the tough leaves from the base, the tips, and the stems.
  • Cook them in salted water with yellow lemon juice for 40 minutes from the moment it starts to boil. Cool and remove the leaves until you obtain the hearts. Reserve the cooked leaves.
  • Pour into your Vitamix® container the artichoke hearts, spinach, garlic, onion, chilies, mayonnaise, yogurt, lemon juice, and season with salt and pepper.
  • Close the lid tightly, select speed 1, turn on the blender, and gradually increase the speed to 10 and then to high. Blend for 2 minutes or until you achieve a smooth and homogeneous mixture.
  • Serve the dip and accompany with the vegetable sticks, artichoke leaves, and toasted bread.
