Olive Cream

It is a delicious cream for very demanding palates. Pair this olive cream with tasty toasts or savory crackers.

  • 1 can pitted green olive
  • 1/4 leeks
  • 1 clove garlic, chopped
  • olive oil
  • 1/2 cups cream
  • salt , to taste
  • 1 pinch thyme
  • pepper, to taste
  • 1/3 celeries
  • 2 teaspoons capers

  • In a small steel pot, fry 2 ounces of olive oil, leeks, celery, garlic, olives, and capers.
  • After frying everything, add either chicken broth or water, the cream, a pinch of thyme, and chicken salt.
  • Then blend, strain, and bring to a boil again to give body to the cream, and it's ready. Enjoy!
