Pinto Bean Dip

  • 1 cup pinto beans
  • 100 grams cream cheese
  • 1/2 cups sour cream
  • 2 tablespoons serrano chile, finely chopped
  • 2 cups Manchego cheese, grated
  • 1/2 cups chives, finely chopped

  • Preheat the oven to 170°C.
  • Mash the beans in a bowl and add the cream cheese, sour cream, and chilies; mix well. Incorporate 1-1/2 cups of cheese into the bean mixture. Place the mixture in a baking dish.
  • Bake for 20 minutes. Remove from the oven and add the remaining cheese; bake for 5 more minutes to gratin.
  • Add the green onions as decoration.
