Ricotta Dip with Chiles

  • 3 cups olive oil
  • 2 cloves garlic
  • 2 leaves bay
  • 3 pieces allspice berry
  • 5 pieces pepper, pink
  • 5 pasilla chiles
  • 5 morita chiles
  • 2 tablespoons grain salt
  • 2 tablespoons raw sugar
  • 1 tablespoon paprika
  • 3 cups ricotta cheese
  • 1 teaspoon oregano
  • salt

  • Saladitas® saltine crackers

  • Heat the olive oil in a pot over medium heat and add the garlic, bay leaf, and peppercorns; add the pasilla chiles and morita chiles, fry for a few seconds and remove.
  • Let it cool, grind the chiles with a little oil and add the rest of the oil, add the paprika, salt, and sugar. Reserve for 48 hours.
  • Mix the ricotta cheese with the oregano and season with salt and pepper.
  • Serve on a plate and add the chili oil on top. Garnish with oregano and serve with Saladitas crackers.
