Dumplings are a traditional Eastern recipe where a wonton-type dough is filled with vegetables, seafood, pork, or chicken and steamed. This recipe uses a shrimp filling, but many variations can be made.

150 grams shrimp, peeled and deveined
3 tablespoons water chestnuts, canned
2 tablespoons chives, chopped
1 tablespoon sesame oil
2 tablespoons fresh ginger, chopped
1 tablespoon sugar
1 tablespoon sherry
1 tablespoon oyster sauce, or plum sauce
leaves lettuce, for cooking the dumplings

In a food processor, puree the shrimp.
Take a deep bowl and mix the shrimp, chopped water chestnuts, scallions, sesame oil, ginger, sugar, sherry, and oyster sauce.
Take the wonton sheets and if they are not round, cut them with a cookie cutter. Ideally, they should have a diameter of 5 cm.
Place a tablespoon of the filling in each wonton and spread a little. Fold the wonton like a quesadilla and pinch the edges with your fingers.
In a wok, bring 3-4 cups of water to a boil and place a steamer on top. Arrange the lettuce leaves on the steamer.
Place the dumplings on the lettuce, ensuring they do not touch each other (to prevent sticking). Cover the steamer and cook for 10 minutes.
