Dumplings

Dumplings are a traditional Eastern recipe where a wonton-type dough is filled with vegetables, seafood, pork, or chicken and steamed. This recipe uses a shrimp filling, but many variations can be made.

  • leaves wonton wrapper, for dumplings
  • 150 grams shrimp, peeled and deveined
  • 3 tablespoons water chestnuts, canned
  • 2 tablespoons chives, chopped
  • 1 tablespoon sesame oil
  • 2 tablespoons fresh ginger, chopped
  • 1 tablespoon sugar
  • 1 tablespoon sherry
  • 1 tablespoon oyster sauce, or plum sauce
  • leaves lettuce, for cooking the dumplings

  • In a food processor, puree the shrimp.
  • Take a deep bowl and mix the shrimp, chopped water chestnuts, scallions, sesame oil, ginger, sugar, sherry, and oyster sauce.
  • Take the wonton sheets and if they are not round, cut them with a cookie cutter. Ideally, they should have a diameter of 5 cm.
  • Place a tablespoon of the filling in each wonton and spread a little. Fold the wonton like a quesadilla and pinch the edges with your fingers.
  • In a wok, bring 3-4 cups of water to a boil and place a steamer on top. Arrange the lettuce leaves on the steamer.
  • Place the dumplings on the lettuce, ensuring they do not touch each other (to prevent sticking). Cover the steamer and cook for 10 minutes.
