Dumplings are a traditional oriental recipe where a wonton type pasta is stuffed with vegetables, seafood, pork or chicken and steamed. This recipe uses a shrimp filler but many variations can be made.

Ingredients

8 servings
  • leaves of wonton for dumplings
  • 150 grams of shrimp peeled and deveined
  • 3 spoonfuls of water chestnuts canned
  • 2 spoonfuls of scallion chopped
  • 1 tablespoon of sesame oil
  • 2 spoonfuls of fresh ginger chopped
  • 1 tablespoon of sugar
  • 1 tablespoon of sherry
  • 1 tablespoon of oyster sauce or plum sauce
  • leaves of lettuce to cook the dumplings

    Preparation

    In a food processor, purée the shrimp.
    Take a deep bowl and mix the shrimp, the chopped water chestnuts, the chives, the sesame oil, the ginger, the sugar, the sherry and the oyster sauce.
    Take the wonton leaves and if they are not in a circle shape, cut them with a cookie cutter. Ideally, they have a diameter of 5 cm.
    Put a spoonful of the filling in each wonton and sprinkle a little. Combine the wonton like a quesadilla and hold the edges together with your fingers.
    In a wok, boil 3-4 cups of water and put a steamer on top. Arrange the lettuce leaves on the steamer.
    Put the dumplings on the lettuce making sure they do not touch each other (so they do not stick). Cover the steamer and cook for 10 minutes.

    PRESENTATION

    Serve the dumplings in an oriental basket like the one we showed in the photo or on a plate. Serve with prepared soy sauce.

    TIPS

    If you do not have a professional steamer for dumplings use a lid on a traditional steamer.
