Easy Cheese Fondue

  • 100 grams Gruyère cheese
  • 150 grams Emmental cheese
  • 100 grams cheese, raclette
  • 1 baguette, white
  • 1 clove garlic
  • 1 tablespoon butter
  • 1 glass white wine
  • 1 1/2 tablespoons cherry liqueur, Kirsch
  • 1 pinch nutmeg
  • potato, cooked, for accompaniment
  • pickled onions, caramelized, for accompaniment
  • pickles, in vinegar, for accompaniment
  • baby corn, in brine, for accompaniment
  • semi dry white wine, for accompaniment

  • Grate the cheeses and cut the bread into small cubes.
  • Gently hit the garlic clove and rub it on the inside of the fondue pot to thoroughly infuse the aroma. Preheat the pot to 90° C.
  • Add butter and once it melts, slowly pour in the wine until fully integrated.
  • Add the cheeses and mix slowly, making figure-eight movements with a wooden spatula. Gradually incorporate the wine with the cheeses and stir constantly to prevent the cheese from burning at the bottom. Mix until you achieve a creamy and homogeneous texture.
  • Add cherry liqueur “Kirsch” and a pinch of nutmeg. Lower the temperature.
  • Serve immediately with bread and accompaniments of your choice. These can be boiled potatoes, pickled or caramelized onions, pickles, or tender corn in brine.
  • Enjoy and pair with semi-dry white wine.
