Quesadillas with Hummus, Cheese, and Avocado

Delicious hummus quesadillas, perfect for a quick dinner for 2 people. They will take little time to prepare and their unique flavor will delight you.

  • 4 tortillas, large
  • 1/2 cups Hummus Libanius®
  • 1/2 red onions, chopped
  • 1 cup Manchego cheese
  • 1 avocado

  • Preheat the oven to 180º C.
  • Place 2 tortillas on a large baking tray lined with parchment paper.
  • Using a spatula, spread the hummus over each tortilla, ensuring to cover the entire surface.
  • Add the onion and shredded cheese evenly.
  • Cover each quesadilla by placing the remaining 2 tortillas on top.
  • Bake for 3 minutes or until the cheese is completely melted and the tortillas take on a light golden color.
  • Once removed from the oven, add the sliced avocado.
  • Serve immediately.
