4 tortillas, large
1/2 cups Hummus Libanius®
1/2 red onions, chopped
1 cup Manchego cheese
1 avocado

Preheat the oven to 180º C.
Place 2 tortillas on a large baking tray lined with parchment paper.
Using a spatula, spread the hummus over each tortilla, ensuring to cover the entire surface.
Add the onion and shredded cheese evenly.
Cover each quesadilla by placing the remaining 2 tortillas on top.
Bake for 3 minutes or until the cheese is completely melted and the tortillas take on a light golden color.
Once removed from the oven, add the sliced avocado.
Serve immediately.
