14 bacon, sliced
2 slices sandwich bread
80 grams Oaxaca cheese, shredded
2 tablespoons Poblano chile strips, sweated, peeled, and cut into thin strips
4 tablespoons cheddar cheese, grated

Heat a pan on the stove over high heat.
Place the slices of bacon in a cross on a cutting board. Put a piece of bread on top of the bacon slices.
Place the Oaxaca cheese on top of the bread, followed by the poblano strips. Cover with cheddar cheese and top with another slice of bread.
Wrap with bacon.
Brown the sandwich for 10 minutes on one side. Flip to brown the other side for another 10 minutes.
Cut and serve.
