Vegetable Skewers with Tasty Cream Sauce

  • 1 red bell pepper, cut into 1-inch cubes
  • 1 red onion, small, peeled, halved, and cut into thick slices
  • 2 zucchini, medium, sliced
  • 16 button mushrooms, clean
  • 8 cherry tomatoes
  • 1/4 cups whipping cream, Non-Dairy Creamer for Liquid Coffee
  • 15 leaves basil
  • 2 ounces Philadelphia® cream cheese, at room temperature
  • 6 ounces Greek yogurt
  • 1/2 cups cheese, crumbled bleu
  • 1 clove garlic
  • 3/4 teaspoons guajillo chile, powder
  • 1/4 teaspoons table salt
  • 1 teaspoon fresh rosemary, leaves

  • Thread the bell pepper, onion, zucchini, mushrooms, and tomatoes onto the skewers, alternating colors and flavors.
  • Combine Coffee-mate, basil, cream cheese, yogurt, bleu cheese, garlic, guajillo powder, and salt in a food processor, pulse until smooth.
  • Place in a serving bowl, sprinkle with rosemary, and set aside.
  • Preheat the grill to medium-high heat. Brush the skewers with olive oil.
  • Grill, turning occasionally, for about 10 minutes or until the vegetables are tender all over.
  • Serve the vegetables with the yogurt sauce.
