Prepare an appetizer of eggplant hummus served with seed bread, a Lebanese recipe known as baba ganoush, delicious and perfect to offer as a snack at your gatherings, serve it with seed bread. Delicious.
Grease a baking tray with oil. Cut the eggplants and scallions in half. Place them on the tray skin side up and add the unpeeled garlic. Season, drizzle everything with a good amount of oil and bake for 30 minutes.
When they cool down, peel the garlic, scallions, and eggplants. Chop them and place them in a jar. Crack the walnuts, chop them, and add them.
Also add a couple of tablespoons of oil, a few drops of lemon juice, and cumin. Season with salt and pepper and blend with an electric mixer until you achieve a fine paste.
Place the slices of bread on a sheet of parchment paper, spread them with the beaten egg whites, sprinkle with pumpkin seeds and sesame seeds. Cover them with another sheet of parchment paper and roll them out with a rolling pin. Toast them in the oven until golden. Serve the hummus with the bread and garnish with some parsley leaves.
