Eggplant Hummus with Seed Bread

  • 3 eggplants
  • 1 onion
  • 2 cloves garlic
  • 1 tablespoon lemon juice
  • 8 slices box bread
  • 2 egg whites
  • 1/4 cups extra virgin olive oil
  • 30 grams sesame seed
  • 40 grams pumpkin seed, pumpkin
  • 15 grams walnut
  • 1/2 teaspoons cumin
  • to taste salt and pepper
  • to taste parsley


Preheat the oven to 190 ° C.
Spread a baking tray with oil. Cut the aubergines and chives in half. Place them on the tray leaving the part of the skin upwards and add the unpeeled garlic. Season, water everything with a good jet of oil and bake for 30 minutes.
When they cool, peel the garlic, the onion and the aubergines. Chop them up and place them in a jar. Casca the nuts, cut them and add them.
Add a couple of tablespoons of oil, a few drops of lemon juice and cumin. Salt and grind with the electric mixer until a fine paste is obtained.
Place slices of bread on a sheet of baking paper, spread them with whipped egg whites, sprinkle with pumpkin seeds and sesame seeds. Cover them with another baking paper and stretch them with a rolling pin. Tuastelas in the oven until golden brown. Serve the hummus with the bread and garnish with some parsley leaves.
