Esquites with Bone Marrow

  • 5 bone marrow, cut in half
  • coarse salt
  • 3 tablespoons garlic
  • 1/2 cups white onion, finely chopped
  • 1/4 cups epazote, finely chopped
  • 1/4 cups árbol chile, sliced
  • 1/4 cups fresh cilantro, fresh
  • 2 cups beef broth
  • salt and pepper
  • mayonnaise, for serving
  • queso fresco, for serving
  • chile powder, for serving
  • epazote, for garnishing
  • lime, for accompanying

  • Heat a small pot over high heat, place the bone marrows in a deep pan, season with coarse salt, and cook until golden and fully cooked. Remove from the pan, leaving just one piece, and set aside.
  • Using a spoon, remove the fat left in the pan, add the garlic, onion, and cook until they are shiny. Add the corn, epazote, árbol chili, and cilantro.
  • Fill with beef broth and cook for 20 minutes or until the liquid is reduced and the corn is tender.
  • Serve the esquites over the bone marrow, place dollops of mayonnaise, fresh cheese, chili powder, and epazote. Enjoy and accompany with lime.
