In a food processor, combine the chickpeas, 4 tablespoons of flour, the herbs, garlic, cumin, cayenne, egg, and season with salt and pepper. Blend until smooth.
Transfer the mixture to a deep bowl. Taste the dough; it should be firm enough to form balls. If not, add more flour.
Form falafel balls with the dough, approximately 5 cm in diameter, and roll the balls in flour to coat them.
Heat the oil in a pot to fry the balls and fry until golden and crispy (approximately 8 minutes). Remove from the oil and place on paper towels to absorb excess oil.
Cut the pita bread in half and fill with falafel, cucumber, lettuce, onion, and sauce.
