Falafel

Falafel is a vegetarian chickpea dish typical of the Middle East. It is very nutritious and filling.

  • 2 cans chickpeas, 350 grams each
  • 1/2 cups flour
  • 1/4 cups fresh cilantro, fresh
  • 1/2 cups fresh parsley
  • 2 cloves garlic
  • 1 tablespoon cumin
  • 1 teaspoon cayenne pepper
  • 1 egg, blended
  • pepper, to taste
  • vegetable oil, for frying
  • 3 pita breads
  • 1 cucumber, chopped
  • 1 head lettuce, chopped
  • 1 cup jocoque, Hummus for dipping

  • In a food processor, combine the chickpeas, 4 tablespoons of flour, the herbs, garlic, cumin, cayenne, egg, and season with salt and pepper. Blend until smooth.
  • Transfer the mixture to a deep bowl. Taste the dough; it should be firm enough to form balls. If not, add more flour.
  • Form falafel balls with the dough, approximately 5 cm in diameter, and roll the balls in flour to coat them.
  • Heat the oil in a pot to fry the balls and fry until golden and crispy (approximately 8 minutes). Remove from the oil and place on paper towels to absorb excess oil.
  • Cut the pita bread in half and fill with falafel, cucumber, lettuce, onion, and sauce.
