Figs with Blue Cheese

This snack consists of figs with caramelized almonds and blue cheese. It is ideal for accompanying a wine tasting.

  • 100 grams powdered sugar
  • 120 grams almonds
  • unsalted butter , for spreading
  • 12 figs, ripe
  • 350 grams blue cheese
  • extra virgin olive oils

  • Caramelize the almonds. Heat the sugar in a saucepan over medium heat and stir until it melts and turns a bubbling brown color.
  • When bubbling, remove the saucepan from the heat and add the almonds one by one. Turn them over to ensure they are well coated.*
  • Transfer the almonds to a lightly greased tray and let them rest until cool and hardened.
  • Cut the figs into quarters and place 8 pieces on each plate.
  • Coarsely chop the almonds with your fingers.
  • Distribute the blue cheese, almonds, and drizzle the figs with a splash of olive oil on the plates.
  • Serve with warm baguette bread.
